Okay, not everyone hates Wagyu beef, of course. But there are some common misconceptions and misunderstandings that really get people fired up. Many times we’ve had customers at our West Seattle meat shop not even see the price of the Wagyu steak, just look at you and say, “No way, I don’t want to screw it up,” or “Nah, I can’t afford that”. With all the different styles of Wagyu and different cuts on the animal, we believe that everyone can find the perfect cut and therefore nobody should hate Wagyu beef.

Misconceptions and Misunderstandings

We often see so much hate and factually incorrect comments about Wagyu beef. It’s possible that most people don’t understand what it is, why it’s the way it is, and why it’s such an amazing product. Since Wagyu beef makes up only about 1% of the beef market, many people haven’t encountered it and have only heard about it through some crazy story.

A ton of folks think Wagyu is either $300 per pound or fake, and they’re getting scammed! So, why do people hate it? Is it fear of the unknown? Let’s explore some of the reasons why people might dislike Wagyu beef.

Higher Cost

Wagyu beef can be expensive, sometimes prohibitively so (depending on the style and cut), which can be off-putting to many consumers. It’s a higher quality steak, and it takes longer to produce, so yes, it will cost more. However, there are many different cuts of the cow, and many different styles of Wagyu beef from F1 Cross to 100% Full Blood to A5 Japanese. Exploring these options can make Wagyu more accessible and affordable.

Richness

The high-fat content and marbling make Wagyu very rich and fatty, which some people find overwhelming. It’s definitely going to be richer, and if you prefer straight grass-fed beef, you may not like this. But it’s also okay to like both. Understanding that richness is part of what makes Wagyu unique can help you appreciate its distinct flavor profile. And don’t we all love well marbled beef?!

Not Beefy Enough

Some people find the flavor of Wagyu too mild compared to other types of beef, preferring a stronger, more pronounced beef taste. There are different types of Wagyu to choose from, and these people should try an F1 cross. Different breeding and feeding methods can influence the flavor, offering a variety of taste experiences.

Wagyu is not always readily available, making it an impractical choice for some consumers. Limited supply can also drive up prices and make it difficult for interested customers to find genuine Wagyu beef. Increased awareness and demand can lead to better availability over time.

Portion Size

The richness of Wagyu often means smaller portion sizes, which might not satisfy those used to larger servings of leaner beef. This can be disappointing for diners who equate value with the quantity of food. However, savoring smaller portions of Wagyu can provide a luxurious and satisfying dining experience, and if you want a bigger steak, you should try an F1 Cross Ribeye.
