We’re the Meat Dudes, your guys behind the grill, the weekend warriors, and the passionate professionals, all obsessed with one thing: meat. We own and operate Lady Jaye, a renowned West Seattle BBQ restaurant, LJ Meats, our locally-sourced, sustainable butcher shop, and Little Jaye, Seattle’s favorite bakery.

We dive into everything from Wagyu beef to the inner workings of the meat industry. We’ll teach you how to smoke like a pro, explore sustainable practices, and the secrets to cooking incredible meat. Evan is your relatable meat lover, while Tyler brings the perspective of a pro. Whether you’re a Wagyu aficionado or the go-to grill guy, we’ve got something for you.

Our ultimate goal is for you to understand your meat and the importance of knowing where your food comes from. We’re all about quality, sustainability, and eating really good meat.

Why Wagyu?

We’re all about great cuts and incredible flavor. That’s why we’re obsessed with Wagyu beef. Wagyu isn’t just a luxury—it can also be an affordable cut of high-quality meat that offers an unforgettable eating experience for all meat lovers. 

But our love for Wagyu goes deeper than its great taste. It’s a journey into continued education on the science behind its marbling—the unique white streaks of fat that run through the red muscle tissue—how these animals are raised, and the innovation with how countries are taking Japanese influence and making Wagyu their own.

We want to share our passion with you because everyone deserves to understand (and taste) the awesomeness of Wagyu beef.

Who Are The Meat Dudes?

Just three dudes who love smokin’, grillin’, braisin’, pan-fryin’, and cookin’ meat.

But seriously, who are we?

Evan

Evan isn’t just the business mind behind the Meat Dudes—he’s a passionate foodie on a mission. A seasoned entrepreneur, Evan is on a pursuit for delicious, sustainable meat. He’s traveled the world (world-class flair bartender, anyone?), honing his palate and learning from the best chefs. But Evan’s not just about fancy cuts—he’s the ultimate tester, constantly experimenting and leaning on the meat experts for what works.

He wants you to know where your food comes from and why it matters, making sustainable, high-quality meat accessible to everyone (yes, that means wagyu). Even though Evan does lean more into the business side of the biz, the dude knows a thing or two about meat.

Tyler

Tyler is the co-head chef of Lady Jaye and his 30 years of experience is as diverse as the cuts of meat the Meat Dudes talk about. He’s been a professional cook since he was 16-years old when he began as a young pizzaiolo (pizza dude) in his local shop. He brings his Michelin star experience to Lady Jaye, and now to the Meat Dudes. He’s a life-long learner, constantly exploring new techniques and flavors from around the world. But his desire to perfect and redefine BBQ keeps him going.

In his word, “My experience feels full circle, from my first job standing over a wood fired pizza oven to now standing over a wood fired grill making great tasting meat.”

Charlie

Charlie is the mastermind behind Lady Jaye’s amazing meals. He’s best described as determined, a man on a mission to create the most delicious dishes possible, using only the finest ingredients. Charlie’s passion for meat is undeniable. He champions the concept of nose-to-tail eating, ensuring every part of the animal is used to minimize waste and maximize flavor. While he loves to cook all cuts of meat, duck and pork cheeks are some of his personal faves.
