Everyone’s heard of ribeyes and filet mignons, but there’s a world of flavor-packed, under-the-radar cuts that deserve the spotlight. At The Meat Dudes Butcher Shop, we love introducing people to cuts that fly under the radar but bring big-time eating experiences. Here are some of our favorite underrated steaks you need to try:

Zabuton

Also known as the “Denver steak,” this cut comes from the chuck and is rich with marbling. When it comes from Wagyu, it melts in your mouth and has a perfect balance of fat and flavor. Great grilled or seared.

Teres Major

This lean and tender muscle sits near the shoulder and is often compared to filet in texture. It has a clean, beefy flavor and is perfect for a quick sear and slice. One of the best bang-for-your-buck cuts in the case.

Bavette

The bavette (aka flap steak) is like skirt steak’s bolder, juicier cousin. It’s full of grain and flavor and loves a good marinade. Slice it against the grain for the ultimate taco or steak salad.

Skirt

This cut has long been a favorite in Latin American cooking. It cooks quickly and is super flavorful when seared over high heat. Perfect for fajitas, sandwiches, or just piled high on a plate with chimichurri.

Chuck Eye

The chuck eye is sometimes called the “poor man’s ribeye.” It shares many of the same qualities as a ribeye but at a lower price point. Look for good marbling and grill it with confidence.

Delmonico

This one’s a bit of a mystery cut, depending on who you ask. At our shop, we treat it as a rich, boneless rib steak with all the buttery texture you crave. Perfect for a pan-sear and finish in the oven.

Flank

Flank steak is lean but still packed with beefy flavor. It benefits from a good marinade and must be sliced thin against the grain. Great for stir fry or steak sandwiches.

Beef Cheeks

These underrated gems are meant for low-and-slow. Cooked properly, they become fork-tender and packed with deep, savory flavor. Ideal for braises, tacos, or gourmet barbacoa.
